Crappie Cajun Style
Fish fillets, fresh or frozen
Fish Crisp Cajun Style
¾ cup of cracker crumbs
Oil or shortening for frying
1 egg, slightly beaten with 3 oz. of milk
Thaw fish if frozen, and pat dry
with paper towel.
Cut into serving size pieces.
In shallow dishes, dip fish in
milk and egg, then coat with Fish Crisp Cajun Style.
Dip in milk and egg again, then
coat with the cracker crumbs.
(substitute crackers with cornflakes, if desired)
Fry at 375F in ¼ “
of oil for about 2 minutes on each side or 3 minutes
in deep fryer.
Drain and serve hot!
